You cannot go past this easy microwave mustard sauce recipe.  I promise that you will never, ever burn sauce in a pot on the stove again. Quite frankly the only sauce recipe you will ever need.  There are a number of variations in the recipe, just make the adaptions to suit your meal.

Ingredients

  • 2 TBS butter
  • 2 TBS plain flour
  • 1 cup of Chicken Stock
  • 1/2 cup of cream
  • 2 tsp dijon mustard
  • Salt & Pepper
  • VARIATIONS:
  • White sauce - omit mustard and replace stock/cream mixture with milk
  • Cheese sauce - as per white sauce + 1/2 cup grated cheddar cheese mixed through

Instructions

  1. Add butter to a microwave safe bowl or jug and cook on high for 30 secs or until butter is melted
  2. Whisk flour into melted butter until smooth then return to microwave and cook for 1 minute
  3. Remove from microwave and whisk making sure there are no lumps
  4. Whisk in stock, mustard and cream and cook in 1 minute bursts, whisky after each turn, until thickened. Usually about 3 or 4 minutes.
  5. TIP: Use a jug or bowl that is about double the size of the quantity of sauce to ensure that it doesn’t foam over

    I love a good mustard sauce; this one looks super easy and sounds super tasty. May I ask what you like to use it for? I prefer to have mustard sauce on pork or chicken, but this sauce must have many more uses. Have you tried it on salad?

      Hi Byron,

      The use of the stock makes this really tasty. I use the mustard sauce on corned beef and over chicken. I use the white and cheese sauce variations over pasta and vegetables and anything else requiring a bechamel type sauce.

      I haven’t used it as a dressing on salad as I usually have it warm. It would be good in a warm chicken or potato salad perhaps?
