Watermelon Feta & Mint Salad is perfect for scorching summer days or alongside spicy roasted meats. Hardly any effort is required to prepare the salad so you can put it together shortly before serving. The sweet watermelon and salty feta cheese are cut into bite sized cubes, combined with sweet red onion then gently dressed with mint and olive oil to create a perfect summer salad.
Watermelon Feta & Mint Salad has to be one of the easiest side dishes to prepare. Removing the rind from the melon and chopping the mint is about as difficult as it gets. I love this salad, it has the ideal balance of sweet and salty. You might want to make a double batch as it will disappear pretty quickly. I love the watermelon and feta cut into equal size cubes but, if serving to children, you may want to crumble rather than cube the cheese. A big chunk of feta may be a little too much salty flavour for young palettes.
The salad is best prepared up to an hour before serving. You want to allow a little time for the mint and onion flavours to combine with the juice coming out of t watermelon but, if made too far in advance it can get too watery. If you want to be organised and make the salad ahead of time you can prepare the individual ingredients and combine about an hour before serving.
This light and refreshing salad is a great accompaniment to rich and aromatic dishes and BBQ meats. For a complete menu with a difference serve it with Spiced Side of Salmon and my aromatic Spiced Potato Salad.
What a lovely combination of flavors. The salad looks so bright and vibrant 🙂
Oh, yum Ange! This looks so refreshing and perfect as a summer side!
Thanks Hannah – I love fruity salad.
Ange, this is EXACTLY what we need for hot days (what is with the crazy weather today?! I have a jumper!) either way- hot or cold, this salad has so many of my favourite flavours… I am going to give this a go at the next BBQ. Great recipe lovely!
Its a really refreshing salad perfect on a hot day – unlike today! We have a preppie starting in the rain this morning!
I discovered a love of watermelon while on a juice cleanse kick. Plus feta is a long time love. I can’t wait to try these two flavors together!
Fresh watermelon juice is so good!
This is one of my favorite flavor combinations. So delicious!
This is a great simple salad. Love the sweet with a bit of salt from the feta. I could eat a whole bowl of this salad by myself!
Thanks Sandra! A big bowl is perfect!
I am hoping this is a sign of Spring! Seattle is wet, cold and windy….bring on the watermelon!
You’d think it was winter here in Melbourne the last few days brrrr – but we have a lot more heat ahead of us yet so thankfully this will be on our menus for a while
Great colour and contrast on the salad Ange. Another really good photo. Maybe you should have a pisco sour with it?
I think that is a perfect suggestion!
